How do you use soaked wood chips on a charcoal BBQ? Do you wrap them or just toss them on the coals unwrapped?
Using water soaked wood chips like misquite or hickory is an awesome way to add flavour to your charcoal BBQ. And, of course, the charcoal alone imparts so much flavour. I have used wood by wrapping it in tin foil with some holes on the top, and then placing it on the coals just before cooking. This works well. But today I just put the chips directly on the coals. Wow! The smoke, the aroma, the flavour was so intense! Does anyone else do it this way? Which method do you favour, and why?
Always mix some wet with dry chips. Wrap them in some alfoil and poke a few holes in it. If you are smoking food for a while make a few pouches and change them after about 1 hour or so. Heat it up first and wait for smoke, then put meat on the grill.
